One Pot Hamburger Stew

And all you have to wash is a cutting board, knife, one pot/skillet, and one cooking utensil. Pretty easy, right?! You all know I’m all about the easy meals, especially for a week night. And this one pot hamburger stew just fits the bill!

I got the basis of this recipe from my mom as she made it when I was growing up. And she still makes it today! My mother and I frequently compare dinner ideas. “What are you having for dinner tonight? Do you have any meal ideas I can put on my meal plan?” Just the other day she told me she was having this one pot hamburger stew for dinner that night, and I said I had it on my meal plan in the near future. The next morning I looked at my meal schedule, and I had this same meal planned that night.

Ingredients
  

  • 1 lb ground beef
  • 4-5 medium potatoes diced
  • 4-6 baby carrots (more if desired) diced
  • 4 cups water or low-sodium chicken stock
  • seasoned salt to taste
  • black pepper to taste

Method
 

  1. Brown ground beef until cooked through in a deep skillet.
  2. While meat is cooking, peel and dice potatoes and carrots and set aside.
  3. Once meat is cooked, drain if needed. Then add in potatoes, carrots, liquid of choice, salt and pepper and stir.
  4. Bring to boiling and then reduce heat to a simmer (med/med-low depending on your stove top).
  5. Simmer for 15-20 minutes or until potatoes are soft.
  6. Our favorite is to serve this hamburger stew with Pillsbury crescent rolls.

Variations for Hamburger Stew

  • If you like onions, chop up an onion and add it to this recipe for extra deliciousness (and of course garlic is always a great option)
  • Instead of seasoning salt and pepper, use a packet of onion soup mix. I did this just the other day (with low sodium beef stock), and it was delish!
  • Ground turkey can be used as a substitute in this recipe
  • Want to “beef” up the veggie content in this recipe? Add some peas or celery, or any veggie you might add in a traditional beef stew

    I’m so excited to see this recipe .
    It’s the closest I’ve EVER found to how my Scottish Mother made hers and I do to this day.
    I don’t brown the ground beef though or use any stock .
    Yep , I know it sounds just wrong but it’s amazing.
    THIS is possibly my favorite comfort food !

    Place water , ground beef , peeled onion , carrots, potatoes in large pot
    Season / P&S and garlic powder ( not fresh garlic or garlic salt )
    Boil till veg are tender . ( no variations I’m hardcore on this 😉 )

    Made it tonight and thus googling came across your recipe . EVERY unexpected guest ( not my typical dish for invited company ! lol ) asks for the recipe .
