Easy Crockpot Chicken and Rice Soup

I should title this recipe Super Easy Crockpot Chicken and Rice Soup because it is just that easy. You know those crockpot recipes that you go into thinking it’s gonna be easy and then there’s all these steps to brown the meat first and the the veggies? Yeah, this is not that. When I say easy, I mean easy. Grab a few ingredients, throw them all in the crockpot together, and let it cook! That’s it!

This recipe is perfect to put on in the morning before you go to work. It’s especially perfect for those busy nights where you have a total of 40 minutes at home before you have to leave again. I don’t know if any of you have nights like that, but I have nights-a-plenty exactly like that. This simple crockpot recipe comes from my sister-in-law’s mother. It became a family favorite when my husband and I lived far away from our families and they took us in and made us feel part of their family. So not only is it delicious and easy, it comes with some great memories of Sunday afternoons with friends and new family.

Recipe Tips:

  • I personally prefer to cook the rice separately in a rice cooker and add it in at the end.
  • If you choose to cook the rice in the soup, brown rice is a better option as it holds up better and won’t become mushy.
  • Reserve a little chicken broth until the end if it’s too thick for your liking and you want to thin it out a bit.
  • We opt to serve the soup with Ro-Tel on the side because our kiddos prefer it without.

Easy Crockpot Chicken and Rice Soup

Simple and easy recipe. Toss it all in the crockpot and let it cook!

Cook Time 8 hours
Total Time 8 hours 5 minutes
Servings: 6
Course: Main Course, Soup

Ingredients
  

  • 2 qts chicken broth (or make with water and bouillon)
  • 1 1/4 cups brown rice
  • 1 26 oz. can cream of chicken soup
  • 2-3 chicken breasts frozen or thawed
  • 1 16 oz. can Ro-Tel tomatoes with chilis (optional)
  • 1/4-1/2 tsp garlic powder
  • Fresh ground pepper to taste

Method
 

  1. Combine all ingredients in a crockpot or other slow cooker and cook on low for 8-9 hours or high for 4 hours. Remove chicken breasts and cut into pieces or shred. Return chicken to soup. More broth can be added if the soup needs thinning out. 

Notes

Try serving with some or all of the following: tortilla chips, shredded cheese, black olives, green onions, sour cream, or real bacon bits.
